تاريخچه زعفران در ايران

کلمه "زعفران" قدمتي بيش از ?0?? سال دارد. نام علمي اين گياه (Crocus Sativus) است. زعفران از کلمه زرپران (زر+پر+ان - گلي که پرهايش همچون زر است) در زبان دري آمده و به اين معناست که گلبرگ هاي اين گياه همچون زر گرانبها و قيمتي مي‌باشد. 

کلمه "زعفران" قدمتي بيش از ?0?? سال دارد. نام علمي اين گياه (Crocus Sativus) است. زعفران از کلمه زرپران (زر+پر+ان - گلي که پرهايش همچون زر است) در زبان دري آمده و به اين معناست که گلبرگ هاي اين گياه همچون زر گرانبها و قيمتي مي‌باشد. اين کلمه در زبان‌هاي مختلف به شکل‌هاي گوناگون تلفظ مي‌شود. در پشتو و عربي "زعفران" ، در زبان‌هاي فارسي و ترکي "Zefrun" ،  در زبان انگليسي "saffron"، در زبان اسپانيايي " azafr?n"، در زبان ايتاليايي "zaferano"، در زبان هندي "zuffron" و در زبان فرانسه "safrane" تلفظ مي­شود. در زبان سرياني کُرکُم يا کَرکُم ، ابوريحان بيروني ضمن وصف زعفران و نام‌هاي آن در زبان‌هاي مختلف مي‌گويد زعفران را به رومي اينخوس و قرقو، جالينوس قوروقوس گفته است.

زعفران در اعصار گذشته

 کارشناسان معتقدند که زعفران اولين بار در کشورهاي يونان، ايران، ترکيه و افغانستان رشد کرده است. به روايتي ديگر، پيدايش نخستين مزارع زعفران در جهان در نواحي همدان و کرمانشاه، تفرش و برخي از مناطق مازندران بوده است. پس از اسلام زعفران مناطق بروجرد، اصفهان، نهاوند و ري نيز شهرت زيادي پيدا نمود اما با حمله مغولان کشت آن رو به انقراض رفت. پس از آن کشت زعفران در بيرجند و قائنات شروع شد که تا امروز هم ادامه دارد و بسيار شهرت يافته است.

در عصر هخامنشيان توليد زعفران در ايران قابل توجه بوده به طوري که روزانه در دربار دومينه (حدود يک کيلوگرم) زعفران استفاده مي‌شد. کاربرد زعفران در آن زمان به عنوان رنگ و رايحه انواع خوراکي‌ها مانند تزئين کلوچه، شيريني و نان و همچنين در ساخت روغن‌هاي آرايشي بوده است. اين روغن‌ها همانند کرم‌ها يا ماسک‌ها امروزه نيز جهت زيبايي و لطافت پوست استفاده مي‌شوند. مستندات و شواهد تاريخي حاکي از اين است که از زعفران براي عطر و بخور جهت خوشبو کردن فضاي کاخ‌ها، مجالس جشن و سرور نيز استفاده مي‌کردند. در سنگ نگاره‌هاي تخت جمشيد نيز جلوي داريوش دو بخوردان براي استفاده از عطر و بخور در کاخ‌هاي پرسپوليس کنده‌کاري شده است.

در عصر قاجاريه هم همچون عصر هخامنشيان علاوه بر مصارف غيرخوراکي از زعفران استفاده‌هاي خوراکي هم مي‌کردند و در آماده کردن شربت زعفران و انواع آش‌ها، مسقطي، يخ در بهشت، شله زرد، حلوا و بستني کاربرد داشت؛ زعفران در گذشته جهت مصارف دارويي نيز استفاده مي‌شده است.

دانشمنداني همچون بخارايي، ابوعلي سينا، بغدادي، خراساني و بسياري از پزشکان ايراني- اسلامي از آن در توليد روغن‌ها، مواد آرايشي و ماسک‌هاي زيبايي استفاده مي‌کردند.

شاعراني همچون فردوسي و نظامي گنجوي در اشعار خود به خوشبو کردن فضا توسط زعفران اشاره دارند. براي مثال نظامي در اشعار خسرو و شيرين، اينگونه بيان مي‌کند: "زخار و خاره خالي کن ميانش      معطر کن به مشک و زعفرانش"

زعفران از همان زمان‌هاي گذشته به عنوان ماده‌اي خنده‌آور، مفرح و شادي‌آور، تقويت‌کننده عروق، تقويت هوش و حافظه در منابع طب و داروشناسي کهن ايراني و اسلامي شناخته شده است. پزشکان قديمي همچنين جهت درمان بيماري‌هايي همچون ماليخوليا و جنون‌، مغز و دماغ، سردرد، زخم، ورم‌ و درد مفاصل و به عنوان مسکن و خواب‌آور، تسکين دردهاي قاعدگي و تنظيم عادات ماهانه زنان، ضدعفوني‌کننده، تسهيل در زايمان، و جهت درمان بيماري‌هاي دستگاه گوارش، دستگاه تنفسي، چشم وگوش و ... از زعفران بهره مي‌گرفتند و در نسخه هايي تجويزي، زعفران ترکيب اصلي دارو بود. در آن زمان براي شستشوي چشم، از محلول جوشانده نيمه گرم (ولرم) زعفران استفاده مي‌کردند چون خاصيت ضد عفوني کنندگي داشت.
